This aromatic ancient bread has been passed down throughout the centuries. Due to its ingredients and preparation, this bread is suitable for people who have an intolerance for yeast.  The 24 hour preparation of this bread allows a longer shelf life and is more digestible. The Pagnotta has a distinct flavor and perfume thanks to the light amount of acidity as a result of the preparation process.  It is particularly recommended with speck, ham, salami of wild boar, robiola cheese, camembert cheese and, gorgonzola cheese. It is also suitable for bruschette of every kind or as a snack with chocolate, nuts or cream.
